Ingredients

  • 2 tbs butter
  • 1& 1/2 cups long grain rice
  • 3 cups chicken or veggie broth
  • salt
  • 3 tbs grated parmigiano - not much more than this
  • chopped parsley (optional)
  • 1 tbs fresh lemon juice
  • 1 tsp lemon zest
  • 2 egg yolks from extra large eggs
  • 1/4 cup heavy cream

Preparation

Combine juice, zest, yolks & cream in a small bowl – whisk and keep ready for rice. Heat butter in heavy saucepan add rice,  stir add broth, season w/ salt. Bring to boil, reduce & simmer, cover (cook to taste)…. Just before serving fold lemon sauce into rice . Add cheese & parsley & fold in. Salt if necessary… Serve ASAP.
