Ingredients

  • Collard greens
  • Olive oil
  • Garlic
  • Peperoncino
  • Anchovies
  • Spaghetti

Preparation

Steam the greens, chop . Heat up some olive oil & fry up some garlic and one peperoncino. Let oil cool and mash, until it disintegrates, an anchovy filet or two in the oil mix.... Add the greens and use to top a bowl of spaghetti. Use your choice of grated cheese. Put the greens into a pot of boiling salted water. when just about wilted add spaghetti. When the pasta is done, drain (save some of the water), serve and top with the oil, hot pepper (optional of course) and anchovy mix. Add parmesan or pecorino – if too dry add a bit of the hot pasta / greens water.
